Basil Spelt Linguine
Spelt is an ancient relative of wheat, and it tastes like a mild version of it. Though it contains gluten, it’s tolerated by many people who are allergic to gluten. It has a high protein content, is loaded with complex carbs, and can be a little easier for some people to digest than wheat. We combined one of our most popular herbs, basil, with the spelt for a more interesting flavor profile.

Early in 2011, a small co-op of U.S. farmers approached us about creating pasta made from Farro grain. We think you will love the nutty flavor of this ancient grain pasta!
Organic Freekeh Mafaldine
Early in 2011, a small co-op of U.S. farmers approached us about creating pasta made from Freekeh grain. Freekeh, as we came to learn, is immature green wheat that is roasted using an ancient process that dates back to biblical times. What intrigued us about Freekeh was not just the story behind it (story below), but also that the process results in a grain that is much higher in nutritional value than traditional modern grains. Furthermore, Freekeh had never before been grown and roasted in the U.S.
Seven Grain Orzo
We combined Millet, Organic Oat, Whole Grain Barley, Whole Grain Triticale, Whole Grain Yellow Corn, Whole Grain Rye & Whole Wheat Durum Semolina Flour to create this flavorful, yet healthy pasta. Whole grains are packed with nutrients including protein, fiber, B vitamins, antioxidants, and trace minerals (iron, zinc, copper, and magnesium). A diet rich in whole grains has been shown to reduce the risk of heart disease, type 2 diabetes, obesity, and some forms of cancer!
Spinach Garlic “Pasta Luce Lite” Linguine { Low Carb/High Protein }
This pasta is made with 50% less carbs and contains over 100% more protein. It is made using soy flour, soy protein and semolina. There is no durum in this pasta. Great for those on a low-carb diet without sacrificing any of the taste or texture of our traditional plain pasta. Also great for athletes and others who will appreciate the higher concentration of protein. It takes a little longer to cook than traditional pasta – about 14 minutes.
Five Grain Fettuccine

The oats used to create this pasta provide for a nice roasted flavor. Oats are high in fiber, and because the bran and germ are not removed during the hulling process, also very high in overall nutrition. Oats are considered to be one of the best grains for prompting strong cardiovascular and heart health.
Flaxseeds are an excellent source of omega-3 fatty acids, an essential fatty acid that your body needs to work normally. Because essential fatty acids are not made in the body, we need to get them from our diet (this pasta as an example). Omega-3’s play an important role in reducing inflammation throughout the body and help to promote heart health!
